Springfield food truck moves indoors

Bubby’s Chicken & Waffles, a food truck/restaurant, now has a permanent location in the lower level of the Bushnell Building in Springfield.

Kareem Crossley, the owner, has been selling a “rare” combination of chicken and waffles since the end of June — but, the idea originally sparked in 2015.

Crossley said he and his friends used to make chicken and waffles all the time on Fountain Avenue, and he always enjoyed the atmosphere that was created.

“I’m not selling plates, I’m selling experiences,” Crossley said. “I like it because it is intimate. I get to connect with my customers on a personal level - I’m just not taking your money.”

The waffles he sells are not regular waffles - they contain Fruity Pebbles.

“It’s rare, it’s different - you don’t see it coming,” Crossley said. “It still brings that funny mystery - it gives it some type of nostalgia.”

He explained that the idea of nostalgia, good memories and good vibes helped him create this food truck/restaurant.

Previously, Crossley was operating only as a food truck, but the cold weather prompted him to reach out to the community kitchen. However, when spring comes back around, he plans to operate outside as well.

Bubby’s Chicken & Waffles accepts walk-in, call-in, DoorDash, or UberEats orders. Crossley said Grubhub ordering is coming soon.

With the help of his friend and now employee, Tyler Ulmer, they are able to serve to people from Columbus to Cincinnati.

In less than six months, they have gained a large follower-base, Ulmer explained.

“It’s worth it,” Ulmer said. “We both like seeing people happy. When people eat our food, they’re happy.”

Bubby’s Chicken & Waffles is open 11 a.m. to 7 p.m. Monday-Thursday, noon to 2 a.m. Friday and Saturday, and Noon to 7 p.m. on Sunday at 16 N. Fountain Ave. To place a pick-up order, call 937-450-5332.
