Speakeasy Enterprises, a restaurant group that includes Speakeasy Ramen in Springfield and Speakeasy Miso in Troy, has announced the purchase of 571 Grill & Draft House in New Carlisle.

The restaurant, located on Ohio 571 just outside of New Carlisle, was founded by Tim and Brandy Juday. It is known for an extensive craft beer offering, well executed menu and loyal following thanks to 20 years in business.

Earlier this year the Judays had announced that they were planning to retire and had put the restaurant on the market.

Kim Frazier, founder and owner of Speakeasy Enterprises, said the acquisition is an opportunity to grow the Speakeasy brand, delivering great food and great service in a casual environment. This is the first restaurant to fall outside of the ramen and sushi concepts that Frazier founded her business on with the opening of Springfield’s Speakeasy Ramen in May of 2019 and the April opening of Speakeasy Miso last year in Troy.

The restaurant will be called Miso, the Japanese name for a soybean-based soup, and operate in a former furniture store near Moeller Brew Barn downtown according to Brittany Waters, general manager of Speakeasy Ramen. Her aunt, Kim Frazier, was instrumental in setting up Speakeasy and is heading up the new venue along with a chef.

“We are so excited to continue the vision and mission of the business that the Judays have built,” said Frazier. “We have so much respect for what they have accomplished, and we hope to continue to build on their success.”

Frazier says that customers can expect the same great food and service that’s come to be expected, with many of the staff staying on and the menu remaining the same.

“Tim and Brandy have done such a great job of responding to their customers and delivering great experiences for their customers. There’s a good reason that it’s always busy over there. We want to continue what they have built, so customers can count on great experiences in the future,” said Frazier. “This restaurant) checks all the boxes for me: good food, good service, constantly changing and innovating based on products, trends, and customers in a casual environment. I’m not interested in a special occasion restaurant, where people go for their birthday or anniversary. I like restaurants that people want to go to on a weeknight, after a bad day, for a celebration, or for whatever else.”

Frazier says she and her team are currently exploring an idea for a fourth concept saying the goal is ultimately to have five or six restaurants in the Speakeasy Enterprises group.
